Ingredients
1 pound venison tenderloin
1⁄3 cup parsley (chopped, fresh)
2 tablespoons coriander (chopped, fresh)
1 tablespoon thyme (chopped, fresh)
1 tablespoon cajun seasoning
2 teaspoons salt
Instructions
  1. Mix herbs together
  2. Roll venison tenderloin in the herb mixture
  3. Lay venison on parchment paper on a cooking tray
  4. Let venison reach room temperature before cooking
  5. Cook in 350˚F (175˚C) oven for 20 minutes
  6. Let stand for 10 minutes and slice
