Flattened Chicken

How to cook Brady's Flattened Chicken.

Ingredients
1 brady's flattened chicken (marinated or plain)
Instructions

Barbecue:

  1. Sear each side on high heat for 2 minutes per side
  2. Set one burner to medium and turn off the other burner
  3. Set the flattened chicken over the burner that has been turned off
  4. Cook for 10—15 minutes per side
  5. Let the meat rest for 2—3 minutes before serving

Oven:

  1. Pan-sear the chicken for 2 minutes per side
  2. Place chicken in a glass baking dish, or on a cookie sheet (with foil for easy clean-up)
  3. Place in a pre-heated oven at 350˚F (175˚C) for 25—30 minutes
  4. Let the meat rest for 2—3 minutes before serving
Notes

Note that the deboned chicken can be a bit delicate, so use caution when turning it; we suggest using a good set of BBQ tongs to grab the ends of the drumsticks together and turn that way.

One flattened chicken can feed 4 people.

Lemon Parmesan Chicken

Ingredients
1 chicken breast (boneless, frozen)
2 tablespoons lemon juice
1 teaspoon olive oil
1 clove garlic
4 dashes italian seasoning
3⁄4 teaspoon parmesan cheese
Instructions
  1. Mix all ingredients together and spread on the chicken.
  2. Bake at 350˚F (175˚C) for 25—30 minutes from frozen.
  3. Cut the chicken to ensure that the chicken is white all the way through. If there is any pink or clear meat, return the chicken to the oven for a few more minutes.

Chicken Sausage Bake with Sage and Onion

Ingredients
1 whole chicken
6 pork sausage (halved or quartered)
1 onion
1⁄2 cup olive oil (not extra-virgin)
2 teaspoons english mustard
  black pepper (to taste)
1 tablespoon worcestershire sauce
1 lemon
2 tablespoons sage (fresh, chopped leaves)
Instructions
  1. Cut the onion in to eighths
  2. Put the onion into a freezer bag along with the oil, mustard, dried sage, a good helping of pepper, and the Worchestershire sauce
  3. Cut the lemon in half and squeeze the juice into the bag
  4. Cut the squeezed lemon halves into eighths and add them to the bag
  5. Seal the bag and squish everything around to mix (the mustard needs help to combine)
  6. Open the freezer bag again and add the chicken pieces and sausages
  7. Seal the bag again and leave to marinade in the refrigerator overnight. If possible, turn the bag over at least once to help the mixture to spread evenly
  8. Preheat the oven to 425˚F (about 218˚C). Allow the chicken to come to room temperature in it's marinade.
  9. Arrange the contents of the freezer bag in an 11-inch by 14-inch (about 28 cm by 36 cm) roasting pan
  10. Arrange the chicken pieces so that they are skin-side up and tuck the sausages around them
  11. Sprinkle the fresh sage leaves over the chicken and sausages
  12. Place the pan into the oven for 1 hour and 15 minutes. Turn the sausages over half way through to colour them evenly
  13. Arrange on a large platter and serve

Our regular chicken supplier is LiberTerre, from Mississauga Ontario. All LiberTerre Chickens are raised without the use of antibiotics or hormones, are fed a vegetarian diet, free from animal by-products, and are allowed to roam freely. LiberTerre is also committed to the safety and humane treatment of their animals and take full responsibility for their care and well-being.

We also buy grain-fed chicken from Voltigeurs Farm in Drummondville, Québec. In 1966, Voltigeurs adopted a rigorous process to define each step involved in producing vegetable grain-fed chicken with no animal by-products, and they take good care of their chickens.

We buy our chicken fingers, meatballs, nuggets, and tenders from The Poultry Place in St. Jacobs Ontario. The Poultry Place is well-known for their delicious chicken, which is prepared in small batches to ensure the highest quality.

Chicken Breast

Our boneless, skinless chicken breasts arrive fresh every week. They are grain-fed, air-chilled and drug-free. The chicken is available both plain and seasoned. For no extra charge, we can season the chicken breasts for you with one of our many marinades.

We sometimes order bone–in, skin–on chicken breasts too. Call ahead to make sure we have some!

Flattened Chickens

Why did the chicken cross the road? To get to Brady's of course! Try our new semi-boneless "flattened" chickens! We take out all the bones out except the drum and wings — the chicken is left intact with the skin on. Flattened chickens are perfect for about 4 people.

Cooking time is really short — we recommend about 45 minutes in a 350˚F (176˚C) oven or barbecuing them with indirect heat for the best flavour. Of course, carving the cooked bird has never been easier!
